Gnocchi is one of my favorite dishes. Dumplings = delicious. Normally I prefer a creamy sauce for gnocchi, but I decided to try something different at the request of Chris. Chris wanted a red sauce. I believe he specifically said, "You can't go wrong is red, white, and green." So I began my search. Some recipes were fancy and involved making the gnocchi from scratch. Ain't nobody got time for that. It turns out that I took a lot of short cuts and still the recipe was a hit. My brother liked it so much that I made it again later that week. Here is my lazy girl recipe for Baked Gnocchi.

Prep Time: 15 minutes
Cook Time: 15 minutes
INGREDIENTS:
- 1 package of potato gnocchi (usually found in the pasta aisle)
- 1/2 jar of tomato or marinara sauce
- 3 tablespoons of heavy cream
- 1 ball of fresh mozzarella, torn
- finely chopped garlic
- fresh basil, torn
INSTRUCTIONS:
- Pre-heat oven to 350-degrees.
- Cook the gnocchi by dropping them into boiling salted water. Gnocchis will float when they are done, but the trick is to immediately dump them into an ice bath to ensure they do not over cook. I recommend doing this quickly and once the ice melt to drain and set aside.
- Usually when the water is boiling for the gnocchi, you can start the sauce. Begin with a bit of olive oil and adding the chopped garlic until fragrant. Next add the tomato sauce. If you like lots of sauce add more.
- Once sauce is heated through, remove from heat and stir in heavy cream. Toss in the torn basil. Add the gnocchi to the sauce and salt and pepper to taste.
- Transfer the gnocchi to a baking dish and top with the fresh mozzarella.
- Place in the oven for 10-15 minutes. At least until the mozzarella is melted and browned to your taste.
- Remove from oven and let it stand for 5 minutes. Eat!
I have saved the few leftovers for lunch the next day and it was average. So eat it while you can. If you try this, let me know what you think!
